Ingredients
  

  • 1 whole chicken, approximately 4 pounds
  • Salt and black pepper
  • 2 tbsp olive oil
  • 2 garlic cloves, peeled and minced
  • 4 sprigs fresh thyme
  • 1 lemon, sliced

Instructions
 

  • To get started, preheat your oven to 425°F (218°C).
  • Next, take the giblets out of the chicken cavity and rinse the chicken using cold water, inside out.
  • After that, use paper towels to pat it until it's completely dry.
  • Use olive oil to smear the entire chicken and add a pinch of salt and black pepper.
  • Stuff the cavity of the chicken with minced garlic, slices of lemon, and fresh thyme sprigs to make it more palatable.
  • Use kitchen twine to tie up the legs and hide the wings underneath the body.
  • Place the chicken in a roasting pan and roast for an hour and fifteen minutes or until it achieves an internal temperature of 165°F (74°C) while being checked with a meat thermometer.
  • Take a breather before slicing and serving the chicken by giving it a rest for 10-15 minutes.
